This post is inspired by my middle school bestie Marissa! She was visiting me in LA a couple of weekends ago and asked me, “What’s the secret to meal prepping?”
Jump to Recipe“Easy!” I told her. “You just need your grain of the week (quinoa, brown rice, farro, couscous etc.), protein of the week (baked tofu, salmon, ground turkey, chicken breast, etc.), and most importantly – a tasty vegetable! Lots of meal preppers try to complicate their recipes – I like to make life a little bit easier. Which is why I’ve automated my kitchen as much as possible. So while the grain is cooking in my rice cooker, my vegetable is “frying” away in my air fryer. And then I can spend time seasoning and cooking my protein whether it’s in a pan, the oven, or back in the air fryer after the vegetables. Looking to add more caloric density to your meal? Bring a healthy fat with like a side of hummus, avocado slices, or a small container of almonds. The options are limitless and there’s no reason why tasty lunches can’t be made quickly and easily!
This broccoli dish is a super easy way to add extra greens to your day. Try it with my tasty 5-minute hummus as a snack. Trust me, you won’t regret it!
Easy “Cheezy” Crispy Air-Fried Broccoli
Equipment
- 1 air fryer I love the ninja air fryer with two chambers for faster cooking!
Ingredients
- 2 lbs chopped broccoli florets
- avocado oil spray
- 1 tbsp garlic powder, or chopped garlic
- 1/2 tbsp red pepper flakes
- 1/2 tbsp paprika
- 1 tsp sea salt, to taste
- 1 tsp black pepper, to taste
- 4 tbsp nutritional yeast
Instructions
- Chop the large broccoli florets and add to a big salad bowl
- Spritz avocado oil spray, covering florets well (about 10-15 seconds, mixing around)
- Add salt, pepper, red pepper flakes, garlic powder and paprika.
- Add a hefty amount of nutritional yeast for that cheesiness flavor!
- Mix well – you may need to add another spritz of avocado oil spray if the mixture is looking dry.
- Evenly disperse into air fryer.
- Cook on match cook at 400°F for 25 minutes. At the 10 min mark, pause and mix around the florets in each container.
- Remove from air fryer and enjoy! Mmm!
