This oatmeal is super filling, protein and antioxidant-packed for a nourishing breakfast! I love using oat bran because it has more fiber and thus is more blood sugar stabilizing. Fresh berries are a great alternative to dried fruit as they also contain more fiber and hold more water (lower sugar while being more filling)! Add protein powder of your choice for further blood sugar stabilization and hours of fullness. Lastly, I’ve touched on maca before briefly — it’s a root from South America that may improve insulin sensitivity (and blood sugar regulation) and endurance during high-performance exercise (through mitochondrial biogenesis and free radical scavenging). These two studies were performed in an animal model (limiting application to humans) and more research is needed to validate the findings (for more info, check out this interesting review on the interaction of Maca and the microbiome). Very Berry Energy Oatmeal
Ingredients
- 50 grams Bob's Red Mill Oat Bran
- 1 scoop wellmade MCT Collagen powder, or plant-based protein powder of choice*
- 1 tbsp flaxseed meal (trader joe's brand)
- 70 grams blueberries
- 70 grams raspberries
- 1 tsp cinnamon
- 1 tsp Kirkland vanilla extract
- 1 tsp Navitas Maca powder
- 2 oz Milkadamia (or plant-based milk of choice)
Instructions
- Add ingredients to bowl with water and mix well! Place in microwave for 4 min (or until almost bubbling over the top of the bowl – watch the microwave)!
- Remove from microwave, add a dash of milkadamia (or plant-based milk of choice). Stir and enjoy hot!
