Very Berry Energy Oatmeal

Antioxidant- and protein-packed oatmeal makes for a filling and nutritious breakfast! Use oat bran in place of rolled oats for extra fiber and add ground flaxseed for lignans (anti-cancer properties). Lastly, add maca for anti-fatigue and you'll be buzzing with happiness all day! Yum!

Instructions
 

  • Add ingredients to bowl with water and mix well! Place in microwave for 4 min (or until almost bubbling over the top of the bowl - watch the microwave)!
  • Remove from microwave, add a dash of milkadamia (or plant-based milk of choice). Stir and enjoy hot!

Notes

*I absolutely love the wellmade MCT collagen powder from Thrive Market. It has 10g of protein per serving and the MCT provides a great energy boost without the jitteriness of caffeine. It also mixes extremely well in oatmeal unlike the clumping of normal collagen powder. (Slightly off-topic, but it's smooth and creamy and also goes really well in my coffee concoction - iced coffee, 1 scoop wellmade, milk of choice, cinnamon, and Stevia vanilla extract -- mmm)
Optional - top with a drizzle of almond butter, YoBe plant-based keto coconut yogurt, dried fruit of choice (cranberries, goji or golden berries for less sugar) or sliced almonds and enjoy!
