Briami - Greek-Style Roasted Vegetables

Briam or Briami is the quintessential Greek version of ratatouille. Caramelized onions and shallots add a delicate sweetness. Sautéing before roasting in the oven gives the vegetables a crisp exterior and soft middle to maximize flavor. If opting for low-carb or keto, omit the potatoes. Add chopped fresh basil or mint for an extra kick at the end or shredded parmesan. Enjoy!

Ingredients
  

  • 2 shallots, diced in a food processor
  • 1 cup red onion, diced in food processor
  • 6 cloves garlic, chopped in a food processor
  • 1/2 cup Cold-Pressed Extra Virgin Olive Oil
  • 3 Japanese eggplants, sliced
  • 3 zucchini, sliced
  • 2 carrots, diced roughly
  • 2 red bell peppers, diced
  • 2 large Yukon gold potatoes, diced
  • 2 ripe beefsteak or campari tomatoes, roughly chopped in food processor
  • 1 tbsp finely ground sea salt
  • 1 tbsp ground black pepper
  • 1/4 cup parsley, finely chopped
  • 2 cups water

Instructions
 

  • Heat 1/4 cup olive oil in a large cooking pot
  • In a food processor, add shallots, garlic, onion and 1 cup water and roughly process.
  • Add to cooking pot on medium-high heat. This step is key! You will want to slowly carmelize the onions and shallots so keep on high heat and stir frequently. Keep cover off and add more water slowly as needed. This step will take about 30 minutes.
  • Next, add carrots, zucchini, bell peppers, eggplants, and potatoes on medium-high heat and cover. Mix often, softening the vegetables until cooked (about 15 minutes).
  • Add salt and pepper to the pot and stir well. You can also taste at this point to see if more salt/pepper are needed.
  • Pre-heat oven to 390°F.
  • Meanwhile, roughly food process both tomatoes, parsley and 2 tbsp olive oil and 1 tsp salt and black pepper each.
  • Transfer pot of vegetables to a large baking pan. Pour tomato sauce from food processor over and mix well in the pan.
  • Drizzle 2 more tbsp of olive oil over the top of the vegetable mixture.
  • Add to oven for 60 minutes at 390°F. After 30 minutes, remove from oven and stir before adding back into the oven to ensure even cooking.
  • Remove from oven, let cool and enjoy on its own, over a cup of rice or shredded chicken for extra protein! Yum!

Notes

*Optional - if you don't have ripe beefsteak tomatoes, you can substitute for 4 tbsp tomato paste or 1/2 can Muir Glen fire-roasted diced tomatoes
