Gluten-Free Quiche

This gluten-free quiche is a great grab-and-go dish for those hectic mornings and is protein and veg-filled!

Ingredients
  

For the crust:

  • 3/4 cup coconut flour, see note
  • 1/4 cup tapioca flour, see note
  • 1/2 cup coconut oil or butter, melted
  • 1/2 cup dairy-free milk, or grass-fed milk
  • 3 eggs

For the filling:

  • 3 cups raw spinach, chopped
  • 1/2 cup dairy-free milk, or grass-fed milk
  • 1 red bell pepper, chopped
  • 1/2 sweet onion, chopped
  • 1 clove garlic, minced
  • 7 eggs
  • Kosher salt and pepper, to taste
  • 1 tsp red pepper flakes
  • Optional, 1 cup fresh basil
  • Optional, 1 cup shredded cheese (e.g. mozzarella, cheddar)

Instructions
 

  • Preheat the oven to 350°F.
  • In a bowl, whisk together eggs and coconut oil. Then slowly add in the flours. **Warning: the dough will seem extremely dense and thick– this is completely normal as you’ll form the dough with your hands.
  • Once the dough is complete, grease a 9″ inch pie pan with coconut oil and add in your dough pretty evenly. Stab the center with a fork a few times so it gets air and cooks through.
  • Place in the oven for 15 minutes or until slightly golden.
  • While the dough is cooking, whisk together the eggs and milk.
  • Add in salt, pepper, and red pepper flakes and make sure to whisk well so it looks fluffy.
  • Then add in your onions, garlic, bell pepper, and spinach and whisk together evenly.
  • Remove the pie crust, and turn oven to 375°F.
  • Pour in the filling, and make sure the spinach is completely submerged by the liquid.
  • Place the pie in the oven for 35 minutes, or until the filling is jiggly, but not liquidy.
  • Let it cool for 10 minutes, or if you cannot resist like me, cut a piece immediately and enjoy! Makes great leftovers too.

Notes

*If you don’t have these flours, 1.25 cups of gluten-free all-purpose flour will suffice!
