Yogurt parfaits are a staple of mine especially when I am busy in the hospital wards. A few months back one of my med school friends had a wonderful idea to save the glass jars from a local restaurant called Kreation – they have amazing soups that they sell in the jars (my personal favorites are their white bean kale and butternut squash, mmm)!
Since then I spend 5 minutes the night before work making my parfaits – there are literally hundreds of different varieties, and with the right mix of nuts, seeds, grains, and fruit you can have a high protein, high fiber, and antioxidant-filled breakfast! I will definitely be posting more ideas in the coming months so stay tuned. For today, this yogurt parfait is a great way to incorporate my cinnamon baked apple recipe, so enjoy!
As part of my Greek culture, I have always been a huge fan of Greek yogurt! It’s full of probiotics and high in protein while being low calories. I am striving to be more plant-based / dairy-free these days and recently tried the Siggi’s plant-based plain yogurt. It’s the first plant-based yogurt I have seen that still has a hefty amount of protein without a ton of added sugar (they use coconut and pea protein as their base). The taste was slightly different than regular dairy yogurt but mixed into a parfait you could definitely not tell a difference and this is a great alternative I am going to keep incorporating!

Let me just say, there is NO excuse for eating a sugar-laden bar or latte as your breakfast. These parfaits literally take less than 10 minutes to concoct. And I guarantee your coworkers will be eyeing you with envy when you whip out your parfait in the morning and their chomping on their cafeteria croissant. So let’s get cooking!
Baked Cinnamon Apple Oat Yogurt Parfait

Ingredients
- 1 serving sugar-free cinnamon baked apples, see my recipe!
- 0.8 cup Kirkland Organic 0% Greek Yogurt
- 40 grams Two Good Vanilla Yogurt, About 1/4 of a small yogurt container
- 1 tsp cinnamon
- 1 tbsp ground flaxseed
- 1/3 cup Ancient Grain Purely Elizabeth Granola, Original
- 1/2 cup Unsweetened Vanilla Almond Milk
Instructions
- Add yogurt to base of jar first
- Then add granola, cinnamon, flax and almond milk
- Add granola and mix well, adding more milk for desire consistency (note if making the night before the flax will absorb the milk and thicken the parfait!)
- Place in fridge overnight and enjoy in the AM for a yummy breakfast!
