I have been searching for the perfect gluten-free protein pancake recipe for so long that isn’t too sweet, but also isn’t too oily, and comes out fluffy! After trying to look for different recipes online, I was never satisfied with the ratios and always ended up making pancakes that were too dense or too chocolatey. After playing with the recipe, I finally found something that works well!
I also have included some tips for making “pretty” (circular) pancakes, because sometimes it can be hard when working with gluten-free batter. Enjoy!
Chocolate Banana Protein Pancakes
Ingredients
- 2 cups gluten-free rolled oats, blended to flour in a blender
- 2 scoops of Chocolate Protein Powder
- 1 tbsp unsweetened cacao powder
- 2 ripe bananas
- 2 organic eggs
- 1.25 cups Califia unsweetened coconut almond milk, if nut-free, unsweetened vanilla soy milk works well too!
- 1 cup blueberries, frozen or fresh work!
- 3 tsp vanilla extract
- 2 tsp cinnamon
- 2 tbsp raw honey, or Lakanto Maple Flavored Syrup if sugar-free
- 1/4 tsp baking soda
- A pinch of sea salt
Instructions
- Blend oats in a blender to make your own oat flour!
- Place banana and blueberries in a bowl and mash well.
- Add all ingredients and only 1.5 cups of blended oat flour. Mix well with a masher or electric beater, if you have one.
- If the batter is too liquidy (rolls off the spoon instead of slowly dripping) add more oat flour and beat with whisk, as necessary.
- Using a small pan and no oil (this part is critical for creating the perfect pancakes), turn the stove on to medium-high heat for 3-5 minutes.
- Then add a small amount of batter on medium heat and let sit on one side for 2-3 minutes, or until the bottom is solid, before flipping over to the other side for about 1-2 minutes.
- Optional: top with maple syrup, almond or peanut butter, extra berries, or sliced banana!
