Tasty, simple, savory, crunchy, gluten-free, AND low-carb?! What more could there be? Round 2 of testing this recipe and I think it is perfected… or at least I received the seal of approval from my family who promptly ate all the fritters after my photoshoot! Guess I’ll have to make more this weekend. I hope you enjoy this recipe – great as an appetizer, vegetarian lunch meal prep option, and especially paired with my tzatziki. Mmm!
Savory Zucchini Fritters
These low-carb, vegetarian fritters are perfect topped with a dollop of tzatziki! Just the right amount of crunch, but still moist in the middle, these are sure to be a crowd pleaser for even the pickiest veg eaters. Enjoy!
Ingredients
- 1 box Emilia’s Organic Zucchini Spirals from Costco, drain well and chop strands into pieces <1 inch length (see note)
- 3/4 cup Kirkland Signature Blanched Almond Flour
- 2 eggs, beaten well
- 1 cup green onion, diced
- 1/2 tsp baking powder
- 1/2 tsp ground sea salt
- 1/2 tsp black pepper
- 1 tsp oregano, ground with the palms of your hand or mortar & pestle
- 1 tsp dill, fresh or dried
- 4 tbsp avocado or olive oil, for sauteeing
- Optional, 1 cup organic shredded mozzarella
- Optional, 1 tsp garlic powder
Instructions
- Preheat oven to 375°F and ready a baking sheet with parchment paper
- Make sure the zucchini spirals are chopped into strands <1 inch in length (otherwise the zucchini spirals will end up stringy and mushy)
- Place the chopped zucchini strand into a clean dish towel and wrap well – squeeze and twist the dish towel to drain excess water This step is super important – don’t skip out or your fritters will end up mushy and soggy!
- Once strained, add zucchini strands to a bowel and add salt, pepper, oregano, dill, garlic powder and baking powder. Mix well with a spoon.
- In a separate bowl, beat 2 eggs with a whisk or hand mixer
- Pour the whisked eggs into the bowl with zucchini and mix well
- Add the green onions and mix well. If adding cheese, place in the mixture at this step.
- Add the almond flour and mix well. The mixture should be thick, but not too sticky.
- Heat a large nonstick pan with 2 tbsp avocado oil on medium-high heat.
- Meanwhile, form 8 patties with your hands into small and flat fritters
- Place patties onto frying pan on medium-high heat, cooking for 3-4 minutes on each side or until crispy and golden in color
- Once all fritters are cooked and crispy on each side, transfer to baking sheet and place in oven for 10-15 minutes depending on your preferred level of crunch
- Remove from oven and let cool. Top with traditional tzatziki and more dill and enjoy!
Notes
*One box of Emilia’s spirals contain 4 sealed packages – you will use all for this recipe (alternatively, you can spiral 3 organic green zucchinis and chop the strands into short pieces)
